Apricots are a very good source of vitamins A and C. They are also rich in dietary fibre and potassium. They contain phytochemicals called carotenoids which are responsible for imparting red, orange and yellow colours to fruits and vegetables. The antioxidant lycopene is one of the carotenoids contained in apricots. Zea xanthin is a carotenoid that is absorbed into the retinal “macula lutea” in the eyes, providing antioxidant and protective light filtering functions.
